ANJEER KULFI ~ Happy Winter Week to you all. Here’s one unusual festive treat you can try this season. Healthy, homemade and delicious! Of course its sweet but no sugar indulgence

INGREDIENTS
- Milk 1 litre +1/4cup milk
- Cornflour 2tbsp
- cream 100 gm
- Cardamom 1tsp
- Anjeer /dates 1/2cup (grounded)
- Roasted almonds 1/4cup(chopped)
- Honey1/4cup (optional if you want kulfis to be on sweeter side )
METHOD
- 1.Boil 1 litre milk in a heavy bottom pan and continue to cook till it reduced to half.
- 2.Add 1/2 tsp green cardamom powder. continu(keep stirring in between).
- 3.Mix cornflour with 1/4 cup milk and add to the reduced milk, cook for two minutes, stirring constantly. The mixture at this stage must coat back of a spoon.
- 4. Once cooled down properly add cream, ground figs/dates/,honey and roasted chopped almonds.
- 5.Pour into kulfi moulds and leave to set in the freezer overnight.

Fig is considered immensely beneficial as they are rich sources of vitamins and minerals, including vitamin A, vitamin C, vitamin K, potassium, magnesium, zinc, copper, manganese and iron.

Kulfi is a frozen dessert very similar to icecream but slows cooked and reduced to half its volume to get the thick rich creamy consistency. Likely to have originated during Mughal Empire.
